As part of the grant we gave each 5th grade student a reusable grocery bag with all of the ingredients to make tuna pasta salad for their families.
Tuna Pasta Salad Recipe PDF download in English and Spanish
- 2 cans Oregon Albacore Tuna
- 1 bag or box of spiral pasta – tri-color rotini
- 1⁄4 cup diced red onion
- 1 Bell pepper – dice half of the pepper
- 1 can black beans (drained and rinsed)
- 1 cup grated carrots
- Italian dressing
- Salt and Pepper to taste
Boil pasta until tender. Drain and rinse. Put in serving bowl and let cool while preparing the remaining ingredients. Open the two cans of tuna and pour the tuna and juice in a small bowl and mix with a fork. Add tuna, red onions, bell pepper, black beans, and carrots to the bowl with the pasta. Mix. Pour dressing over the salad until all ingredients are moist. Add salt and pepper to taste.
