Canning Albacore is as easy as putting tuna in the jar and pressure canning it by following the directions for your specific canner. No added fluid is necessary, as the tuna will produce its own healthy Omega-rich juices when canned. You may add salt, garlic, peppers, or other seasonings if desired.

The Oregon State University Extension service offers a Cooking Seafood brochure with instructions on canning tuna.

The basic instructions are:

“For raw pack tuna, no added liquid is needed. Salt is optional. Adjust lids. Process half-pints and pints for 100 minutes at 10 pounds pressure (weighted gauge) or 11 pounds pressure (dial gauge). Increase pressure for higher elevations (see table in brochure).”
