Oregon Albacore Tuna Salad Sandwich

Ingredients:

1 6oz can Oregon Albacore tuna

3 Tbsp finely chopped sweet onion

3 Tbsp finely sliced celery

1 Tbsp chopped parsley

1.5 Tbsp finely chopped fresh herbs, cook’s choice*

2 Tbsp mayonnaise

1 Tbsp extra virgin olive oil

2 tsp fresh lemon juice

2 tsp capers, rinsed (if packed in salt)

¾ tsp kosher salt

¼ tsp black pepper

*Grand Central Bakery uses fresh tarragon and basil but use whichever fresh herbs you like and have on hand! This is delicious with lovage and chives as well. In the spring and early summer, we like to buy fresh onions from our farm partners. They are crisp and sweet, and abundant at the local farmers’ markets.

Directions: Empty the can of tuna in a bowl. Don’t drain—the juices in a good can of Oregon albacore are deeply flavorful. Break the tuna apart with a fork. Mix in all other ingredients and season to taste.

Enjoy as is or place on a hearty sandwich bread. Don’t forget the pickle!
